Arthritis Friendly Recipe: Avocado Vegan Scones

Bare with me on this one!!! I haven't completely lost the plot over the last year - avocado actually makes a great, healthy substitute for butter in these easy, arthritis friendly, three ingredient scones. They are also dairy-free and vegan so great if you or your friends and family can't have milk products for whatever reason.

Avocados are high in fat but it's the healthy monounsaturated kind. They are also a good source of bone friendly vitamin C and B group vitamins. I find avocados easy to cut and scoop even with sore wrists as long as they are very ripe. I use a stand mixer to make scones as I find that easiest and it cuts down on the amount of 'help' my kids try to give me - something about the pale green dough seems to be irresistible to little fingers...

Ingredients:

225g self raising flour
150ml dairy free milk (or you could use soy yoghurt for an even richer scone)
50g (half a small) avocado

Makes 8 small scones or 4 large


Mash the avocado with the yoghurt. Add the flour and mix until just combined - don't over work.

Place the dough on a floured board and pat out with your hands until it is about 2cm thick. Cut out scones using a sharp cutter. Repeat with the leftover dough.

Bake for 15-20 minutes (it will depend on the size of your scone) until well risen and golden.

Like all scones these are best eaten on the day they are made. You can freeze leftovers and  revive them in the oven though.

    As the next step, read Dr. Steven Gundry's The Plant Paradox. It has done wonders for my wife and I since we started following the recommended dietary disciplines at the beginning of April. Turns out I had a gluten intolerance that I was never aware of. So traditional flour presented issues.     And soy contains lectins, which according to Dr. Gundry are best avoided as well. I was always able...so I thought....to get away with eating whatever I wanted. I got lots of exercise and never got sick. Then a couple of years ago I started developing both cellulitis and arthritis. Doctors kept giving me antibiotics and prednisone. After 2 years.....$2,000.00 wasted.....5 doctor visits....one emergency room visit.....getting sick as a dog from the most recent round of antibiotics.....my wife showed me that video, and for the first time in my 64 years I agreed to try a diet. The results have been nothing short of amazing.

    I actually came on this website today after searching to see if someone had a gizmo of some sort to help arthritic hands seal ziploc bags. As a former industrial design graduate, the site caught my attention. It is wonderful that so many clever innovations have been developed to help people cope with their disabilities. However my wife has opened my eyes to the simple fact that in many cases, these innovations are actually a way to deal with symptoms instead of causes.....and while diet won't fix everything.....I've gratefully discovered that it can go a long way toward improving conditions we thought we were stuck with for the remainder of our lives.

  4. Traditionally, south India was known for using cold pressed oil. Bullocks were led around the 'chekku oil near me', turning the wooden crusher to extract oil.I still see my relatives are still cow dung cake using.
